Carrot

Cauliflower

A vegetable typical of maritime climates, it needs well-drained, silty or clay soils, high in organic matter and calcium. Cooking is not always destructive: it softens soluble fibre and makes vegetables easier to digest. It also transforms certain carbohydrates to make them much more digestible.

Tip

Carrots are naturally mild with a delicate, sweet taste: children love them however you serve them. They are also a good way of encouraging them to like other vegetables, for example mixed with peas or mashed with potatoes.
