Quick cuisine
Do you have nothing more than a small hotplate, and your workspace has to do double duty as a desk, bedside table, coffee table and storage area? Then choose the simplest possible methods for adding vegetables to your meals.
Tinned vegetables
Often more economical than fresh vegetables but offering just as much nutritional value, tins help preserve vitamins that are sensitive to light and oxygen. These days a variety of vegetables (corn, peas, mixed vegetables, soya beans, green beans, carrots, celery, etc.) are available in tins, and in most cases ready to eat.
Juices and soups
As a starter or for a snack or light dinner, opt for hot or cold 100% vegetable soup, which you can season to taste with various spices and seasonings.
Crunchy fresh vegetables
With just a knife it's easy to prepare a few celery stalks, cucumber, chicory, a few radishes, that you can nibble at whenever you like or serve before a meal.
Ready-made and/or pre-cooked vegetables
Packaged lettuce, seasoned prepared vegetables, mixed salads: there are many handy solutions available that are ready when you are. You don't need to do the cooking--it's already done.
