Use your ingenuity in combining them: match the plumpness of the artichoke or aubergine with the sleekness of carrots or beets. Some examples: creamed sorrel, artichoke hearts garnished with sorrel, a sorrel/carrot puree.
The taste of aniseed goes well with the acidity of lemon. You can also sweeten them with a little steamed cauliflower, courgettes, and why not some cooked apples? Some examples: Fennel in lemon to accompany fish; fennel puree with cooked apples.
- Play with proportions: a small amount of celeriac with three carrots. You'll have a mild but very tasty puree that everyone will enjoy.
- Onions are acidic, but if you fry them with a pinch of sugar, they'll mellow and their flavour will develop. Pureed with a potato or a handful of cooked cauliflower heads, an onion develops a very subtle taste.
- Cabbage likes bacon and softens when cooked with it, developing a more delicate flavour. Just one slice is enough.
