Aromatic herbs such as parsley, basil, mint and tarragon have excellent nutritional benefits. Packed with flavour, they are also high in vitamins (C, pro-A and B9 in general), and antioxidants (which capture free radicals). Adding a sprinkling of parsley to your green beans or potatoes, will significantly increase the vitamin content of the dish. A little every day all counts at the end of the week: that’s what balance is all about.
