Mange-tout pea curry in a wok

Ingredient
- 400 g mange-tout peas 1 tomato 200 ml coconut milk 4 shallots 1 garlic clove 1 tsp curry powder 1 small chilli pepper 500 g chicken breast
Recipe
- Cut the chicken breasts into small pieces; prepare the mange-tout peas and cut them in slices; cut the tomato into small dice. Chop the shallots and garlic finely and sweat in 1 spoonful of oil heated in a wok; add the coconut milk and diced tomato. Leave to simmer for 3 minutes. Add the chicken and curry powder and leave to simmer for 3 minutes. Add the mange-tout peas and leave to simmer for 5 minutes (adjust the timing depending on how well cooked you want them to be). Add the chilli pepper, finely chopped, at the end of the cooking time.
Tip
Garnish with chives or coriander.
