Ingredient
- 1/2 bunch watercress 400 g potatoes 1 litre water 2 glasses milk 50 g butter or 1 small pot crème fraîche, salt.
Recipe
- Preparation Peel the potatoes and cut them into pieces, add to the pan with the water, salt and watercress and cook everything together. Once cooked, pass through a fine sieve and thin the purée with milk to make a creamy soup. Pour the soup into a soup tureen, add the butter or cream and a few watercress leaves, blanched in boiling water for a few minutes.
