Cabbage and apple salad

Ingredient
- 1 red cabbage 2 green apples, grated
- 1 tbsp Dijon mustard
- tbsp lemon juice
- 125 g chopped walnuts
- 1 tsp sugar
- oil, vinegar, salt and pepper
Recipe
- Preparation Take a red cabbage, cut it into four and remove the hard stalk. Shred finely.
- Mix the oil, vinegar, mustard and sugar in a bowl to make the dressing. Add the apples, onion and chopped walnuts and season with salt and pepper. Mix well and adjust the seasoning to taste.
- Leave in an earthenware bowl to let the flavours infuse for 30 minutes, then serve.
Tip
Add the lemon juice to the grated apple immediately to stop it discolouring.
