- Preparation: Peel the carrots and slice them thinly lengthwise. Peel and chop the onions. Wash and chop the cabbage. Peel and mince the garlic. Chop the coriander roughly. Cut the chilli pepper lengthwise in half, remove the pips and slice thinly. Press the lime into a salad bowl and stir in the garlic, sherry vinegar, sugar and chilli pepper. Add pepper and salt to taste. Add the cabbage, carrots and red onion to the sauce and toss well. Sprinkle with chopped coriander and serve.
Tip
You can also add a bell pepper cut into thin slices.
