- Dry-fry the chopped bacon in a non-stick pan until golden. Drain the lentils whilst the bacon is frying. Peel the shallots and chop them finely.
- Make a vinaigrette with plenty of pepper, the shallots, vinegar and a little oil. Pour over the lentils. Add the chopped bacon and serve.
