Strawberries are rich in vitamin C, making this lettuce salad both healthy and enjoyable to eat.
Ingredients (serves 6):
- 1 lettuce
- 400 g strawberries
- 60 g pine nuts
- 50 g parmesan shavings
- 2 tbsp balsamic vinegar
- 4 tbsp olive oil
- salt, pepper
- Wash the lettuce leaves and chop coarsely.
- Wash and drain the strawberries, hull and cut into quarters.
- Chop the chives.
- In a bowl, whisk the oil with the balsamic vinegar, a pinch of salt and pepper. Mix well.
- On each plate, arrange the lettuce, strawberries and pine nuts, finishing off with parmesan shavings and chives Drizzle with dressing and serve.
Other fruits also lend themselves very well to this recipe, such as kiwi, raspberry, blueberry and grape.
