Sweet potatoes can be a great source of provitamin A, depending on the colour of the flesh. The more intense the orange or red colour, the higher the provitamin content.
Ingredients (serves 4):
- 3 large sweet potatoes
- 200 ml milk
- 5 g salted butter
- nutmeg, salt
- Peel and chop the sweet potatoes and cook them in a pan for 20 minutes.
- Once cooked, mash the potatoes with some of the cooking liquid and warm milk.
- Season with salt, then add the butter and stir.
- Sprinkle with nutmeg and serve piping hot.
You can replace the milk with cream for a smoother, more decadent mash.
