Marinated peppers

A light and tasty recipe, ideal for evening summer meals to share with friends or family. A starter essentially rich in beta-carotene which helps maintain normal vision and vitamin C which helps to protect cells against oxidative stress.

Ingredients (serves 4):

  • 4 peppers of different colours
  • 2 tbsp. of olive oil
  • 1 tsp. of powdered cumin

Instructions:

  • Preheat the oven to 180 ° C, gas mark 6.
  • Wash the peppers. Cut into wide strips ensuring to remove all the seeds. Place the peppers on a baking tray and cook in the oven for 40 minutes.
  • Once cooked, peel and put on a plate or dish. Drizzle with olive oil and cumin and place in the fridge until serving.

As a starter, add a few pieces of toast. As a main meal, a recipe that goes nicely with grilled meat or fish.  A recipe costing less than 5 Euro and accessible to all.
