Chicory and beetroot salad

A fresh, tasty and light salad, ideal for summer meals to share with friends or family. A starter full of vitamins, mainly beta-carotene which will help maintain vision and normal skin.

Ingredients (serves 6):


  • Remove wilted leaves; wash the chicories and then slice.
  • Cut the ham into thin strips.
  • Peel the beetroot and grate.
  • Mix all the ingredients in a bowl and drizzle with some vinaigrette.

Serve with boiled eggs. To add a touch of acidity to this recipe, add few tbsp. of lemon juice.  A recipe costing less than 5 Euro and accessible to all.
