As source of complex sugars and fibre, yam makes a great side dish with meat or fish. Round it off with a green salad or raw veggies, for example.
Ingredients (serves 4):
- 1 yam
- juice of 1 lemon
- Wash and peel the yam.
- Cut it in pieces and splash with lemon juice to prevent it from browning.
- Cook in a pot with slightly salted water for 20 min.
- Drain and server hot.
Eat it like a potato: yams are yummy simply cooked and served with a dab of batter.
