Have no idea how to cook pulses? Then let Hubert Cormier, a nutritionist from Quebec, change your mind about them with some extraordinarily tasty recipes! There is nothing wrong with pulses, on the contrary even… Have a look at this book, which we know you will devour from cover to cover.

Hubert Cormier reminds us in his book that in times where everything is becoming more expensive, we sometimes have no choice but to make do with less. The first thing many people economise on is food, where they buy it and what they eat. Fortunately, some foods continue to be affordable, like pulses. And what’s more, they have an exceptional nutritional profile and are incredibly versatile.

With or without meat, whatever suits you!

They are a perfect substitute for meat in all kinds of dishes, or can be turned into flour or a puree to prepare bakery products or hummus. What’s more, adding pulses to your diet will increase your intake of dietary fibre, which, in turn, will improve your gut health and help you control food cravings.

80 easy recipes, for every time of the day!

The recipes in this book will show you how easy it is to include pulses in your daily meals. A duck cassoulet, mochi, dahl, lentil pâtés, crackers, chocolate brioches, dips… The possibilities are endless. So, why not widen your horizon and get ready to treat your taste buds to some recipes that draw inspiration from world cuisine.

Hubert, why should we devour your book from cover to cover?

The three words that immediately come to mind when I think of my book Légumineuses & Cie, which was published by Editions La Semaine, are Discovery, Surprise and Creativity. I wanted to surprise people so they would say, “I never thought of that!”. I really want to make people discover the many pulses that are available, so we feel better prepared and include them more in our diet.
