Isothiocyanates are molecules found in cruciferous vegetables like broccoli, Brussels sprouts, cauliflower, and cabbage. Epidemiological studies suggest that eating cruciferous vegetables could lower your overall risk of cancer, especially colon and prostate cancer. Sulforaphane (SFN) is an isothiocyanate found in cruciferous vegetables, especially broccoli. Recent studies suggest that SFN provides protection from tumor development during the “post-initiation” phase of cancer.
