Onions and gherkins

An unconventional dish for those who are looking for vegetables with a distinctive taste.

Ingredients (serves 6):

  • 100g of onions
  • 200g of Russian gherkins
  • 200g black olives
  • salt, pepper, oil, vinegar


  • Cook the unpeeled onions in the oven at 180°C (Th7) for 1h.
  • Leave to cool, then peel and cut in 4.
  • Arrange the onion quarters in a decorative way in a plate, together with the gherkins sliced in thin strips.
  • Add the olives and sprinkle with vinaigrette.

A few cherry tomatoes will add a touch of colour.
