Fennel with white wine and shallots

An ultra-light, ultra-quick recipe with plenty of flavour, perfect for serving with a whole or filleted fish or to liven up a chicken or turkey breast.

Ingredients (serves 4):

  • 4 bulbs fennel (600 g frozen)
  • 1 shallot
  • 1 lemon
  • 1 glass white wine
  • 3 pink peppercorns
  • 1 pinch salt


  • Steam the fennel for 10 minutes.
  • Drain and add to a pan with the flavourings: chopped shallot, white wine, pink peppercorns and salt.
  • Place over a high heat to reduce slightly. Add the lemon juice as you serve.

Leave the fennel to marinate in the refrigerator in the white wine and lemon juice and served chilled with smoked fish.
