An original recipe that invites the vegetables at the aperitif! A dish full of vitamins (beta-carotene, B9 and C) that contribute to the normal functioning of the immune system.
Ingredients (serves 4):
- 2 zucchini (courgette)
- 4 carrots
- 1 pack of corn flakes
- 1 dash of olive oil
- A little honey (or double cream)
- Salt and pepper
- Peel and dice the carrots and zucchini.
- Fry the vegetables with a little oil until golden.
- In a salad bowl, pour the vegetables and corn flakes and mix well. If you find it a bit dry, add a little honey or a low-fat double cream.
Other vegetables also go nicely with this recipe: aubergine (eggplant), broccoli, potato, mushroom, leek… A recipe costing less than 5 Euro and accessible to all.
