Cabbage and apple salad

A healthy starter that will satiate even the biggest appetites! An excellent way to start a meal. The sweet and sour mix is a good boost to lazy intestines.

Ingredients (serves 6):

1 red cabbage
2 green apples
1 tbsp Dijon mustard
tbsp lemon juice
125 g chopped walnuts
1 tsp sugar
oil, vinegar, salt and pepper

Take a red cabbage, cut it into four and remove the hard stalk. Shred finely.
Mix the oil, vinegar, mustard and sugar in a bowl to make the dressing. Add the apples, onion and chopped walnuts and season with salt and pepper. Mix well and adjust the seasoning to taste.
Leave in an earthenware bowl to let the flavours infuse for 30 minutes, then serve.

Add the lemon juice to the grated apple immediately to stop it discolouring.
