Pan-fried chicory

It doesn’t take much to make a delicious vegetable dish ! One shallot and a bit of oil are all you need to make an ideal dish to serve with grilled meats or ham. Vitamin B9 and fibre guaranteed.

Ingredients (serves 4):


  • Chop the shallots finely ; sweat with the oil in a pan over a medium heat.
  • Do not let them brown.
  • Wash the chicory and slice into fine strips ; add to the shallots, cover and leave to cook for around 15 min.
  • Season with salt and pepper to taste.
  • Stir from time to time to prevent the chicory sticking ; add a little water if necessary.

There’s no need to add any fat if you use a non-stick pan. You’ll save 90 kcal… but you will also miss out on the benefits of vegetable oils.
